They found that raw honey contains 4.3 times more antioxidants than processed varieties. Interestingly, an unofficial study by the National Board of National Honey based in America showed that honey with minimal processed contains the values of antioxidants and minerals similar to that of raw honey. However, there are very few studies compared to these two types. More research in this area can help the effects of processing antioxidants in honey.
